La filtrazione estrema impatta sulla microflora (lieviti e batteri) crea un vino sterile, chimico e senza vita. Il vino non filtrato e senza solfiti aggiunti è un caleidoscopio del gusto in continua evoluzione con uno spettro ampio di sapori partendo da una mineralità bella e slanciata e una profondità di sapore.
