Apogee XII from London's Bimber team is created using a blend of Speyside and Highland single malts, aged for at least 12 years. After blending, the whiskey was additionally rested in ex-bourbon barrels which had previously also been used to mature Bimber's single malt whisky. An intriguing take on Bimber, a distillery that has been very busy impressing us with its fabulous range of spirits (particularly those whiskeys mentioned above).
Nose: nutmeg, honeycomb, brown sugar, soft oak, cooked orchard fruits.
Palate: peaches in syrup, crushed peppercorns, menthol, a hint of warming cedar.
Finish: Crispy pear and a hint of lemon, with layers of caramel.
