Single Malt Unpeated 15 years is a Whiskey Cask Strength that embodies the passion and dedication with which Billy Stitchell dedicates himself to Caol Ila products. In fact, Billy continues the path traced first by his great-grandfather, then by his grandfather and finally by his father, making the art of distillation a set of jealously guarded knowledge and traditions. This Single Malt is proof of the great craftsmanship of Caol Ila's labels, which in this case proceeds with full-strength bottling, limiting the use of peat during malting operations. A whiskey with strong and delicate flavors at the same time, therefore, perfect for spending an evening of quality.
This 15 year Single Malt Cask Strength Unpeated Whiskey is born from the distillation of barley malt, carefully selected by the Caol Ila team. The choice of raw material is fundamental for this distillery, which presents itself as one of the most important realities when it comes to the production of Scottish Single Malts. The distillation is carried out using six large copper stills, and the product obtained is matured for 15 years in oak barrels. At the time of bottling, the whiskey is decanted at full strength, directly from the barrels, without proceeding with any dilution with water.
