The V.S. (Very Special) is the youngest category of Cognac; in fact, according to the official classification the only requirement for a Cognac V.S. is that the youngest distillate in the blend is aged in wooden barrels for at least 2 years. Cognac V.S. Martell is produced by distilling light white wine produced primarily from the Ugni blanc variety grown in the Cognac region. A unique feature of Martell is that the wines are perfectly filtered before being distilled. The distillation is discontinuous in traditional copper stills and the aging takes place in Tronçais oak barrels.
