The long stay on the yeasts enhances the characteristics of this wine, with its pale onion skin colour, creamy foam and fine and persistent perlage. On the nose it is fragrant and decisive, characterized by the unmistakable peculiarity of Pinot Noir, with slight hints of dried wild flowers. On the palate it stands out for its freshness in perfect balance with the structure; a wine of notable harmony and elegance.VinificationThe 'flower' must underwent the first alcoholic fermentation in stainless steel tanks. The second fermentation in the bottle in contact with the yeasts took place over the following 24 months.
