The recipe is secret but at the basis of everything is the pulp of the blue agave which is toasted and softened for three days and then fermented with very fine yeast for eighty hours, a very different artisanal method and decidedly longer than the industrial production of tequila, which does not involve toasting but only steam cooking for a few hours.
