The most valuable characteristic of Guelfo amaro is given by its mixing with Brandy aged for 36 months, the real backbone of the product; Thanks to its natural density, brandy rounds out the product in the mouth, dampening the perception of the 30 degrees of alcohol in the drink. The aromas used derive exclusively from natural raw materials and, depending on the result desired, two different processes are followed: Extracts: the chopped and chopped raw material is immersed in a hydroalcoholic solution and after 2 weeks, in large steel tanks, it is recovered the liquid and pressed the solid part to recover all the extract. Essential oils such as sweet orange, bitter orange and lemon are obtained by cold pressing the peels, and are subsequently distilled at low temperatures under vacuum. This practice is not very common but it allows you to have an essential oil of excellent quality and stable over time, limiting the annoying collars on the bottle cap and the impossibility of oxidation of the processed product.
