Carato Venusio is a well-structured and elegant wine which presents: intense ruby red color with light garnet reflections. Vinous and personal bouquet with delicate aroma of dried violet, currant, ripe black fruit (blueberry, blackberry), liquorice. Hints of incense on the finish.
On the palate, a velvety tannic texture in a full-bodied and austere sip, but very fine and elegant. Good freshness.

Production area: North-eastern part of the Province of Potenza delimited by the production specification which includes the territory of n. 15 Municipalities, especially in the Municipality of Venosa Città di Orazio.
Harvest period: From 1st to 10th November (overripeness of the grapes on the vine).
Harvest method:Selection of the grapes, harvested by hand, in 12 – 15 kg crates in the early hours of the morning and immediate transport of the same to the cellar.
Vinification: Vinification in small fermenters and skin maceration at a controlled temperature of 23° to 26° C. for approximately 15 days, completion of the alcoholic and malolactic fermentation in stainless steel tanks.
Aging:In small French oak barrels of 225 liters each. for 18 – 24 months and in bottle for at least 12 months.
Bottling:Cold filtration and bottling.

Gastronomic pairing and serving temperature: It is the classic aging wine suitable for roast red meats, game, strong dishes, and mature hard cheeses. It is recommended to uncork at least an hour before and serve at 18° – 20°C.
Characteristics of Aglianico del Vulture
In Basilicata there are two magic words: "Aglianico" and "Vulture", which give life to these unique and unrepeatable vineyards in their production, which grow on the slopes of the Vulture volcano. The uniqueness factor dates back to 133,000 years ago, when there was a gigantic volcanic explosion and the ashes invaded the entire territory. Over the centuries these ashes have merged with the territory becoming a spongy rock, also called volcanic rock (or volcanic tuff). In fact, farmers say that great wines are great because there is tuff underground that "nurses the plant". All this together with the extreme conditions, the lack of water, the strong temperature variations and the mountains, contribute to the growth of this incredible vineyard which takes the name of Aglianico del Vulture. From here comes this extraordinary wine, strong, important, truly warm; we could define it as an “iron fist in a velvet glove”.
The grapes are harvested between the end of October and the beginning of November, after which it is vinified and bottled, remaining in the bottle for 9 months, thus becoming "Aglianico del Vulture Doc".
By giving it longer aging times, both in barrel and in bottle, it becomes “Aglianico del Vulture Superiore DOCG”. An important wine with a structure that evolves over time, thanks to its incredible longevity.
Its dominant characteristics on the nose are those of: Ripe red fruits, with an enchanting note of violet. On the palate it is a warm, important, rich wine, with a slightly bitter note, which distinguishes it, which recalls the hints of liquorice root; and this is how in one sip you can savor the entire territory, which still preserves an uncontaminated nature.
Its origins are very ancient and date back to Magna Graecia, even the poet Homer dedicated verses to it.
