Production per Ha: 8 – 10 Ton
Altitude of the vineyards: 400 – 550 metres.
Harvest period:From 10th to 30th October.
Harvest method: Selection of grapes, hand-picked in the early hours of the morning and transportation immediately of the same in the cellar.
Production technique: Crushing and destemming of the grapes, draining and separation after approximately 12 hours of free-run must, decantation and fermentation at a controlled temperature from 15° to 18° C.
