Land and location Hilly area located about 250 meters above sea level, where, in a calcareous soil, the vineyards alternate with olive groves and Mediterranean scrub

Vintage 2019

Winemaking and refinement The transformation techniques are simple and traditional, aimed at maximum respect for the raw material. The golden and well-ripe grapes, with great aromatic potential and extraordinary concentration, are destemmed and mashed. The film maceration on the skins for 4 days is followed by soft pressing and cold decantation of the must. Spontaneous alcoholic fermentation, without the use of selected yeasts, is carried out partly in steel and partly in French oak tonneaux. The evolution of the two matches continues in a distinct manner; for one part in steel and at low temperature without carrying out the malolactic fermentation and for the other in tonneaux with the malolactic fermentation taking place. This type of refinement contributed to enriching and complexizing the aromas and taste of the assembly of C'era una Volta.

Tasting Its color is yellow like gold and bright like the sun. On the nose it expresses an intense bouquet, with a strong floral hint of chamomile and warm notes of ripe yellow fruit. Light and sweet references to oak wood complete a highly expressive olfactory composition, with a pleasantly ethereal finish. Enveloping entry into the mouth due to its majestic volume and long persistence. The taste balance between the sweet alcoholic, polyalcoholic, vanilla and fruity components and the vibrant fresh-savory quality is well orchestrated.

Pairings A structured wine that is not afraid of the most daring pairings. It is at its best with first courses in general. Extraordinary with local truffles and roast meats.

Service method Serve at 10/12°, uncorking when pouring.
