CARTRON MARC DE BOURGOGNE HORS D'AGE 15 YO A.O.C.
The extraordinary quality of Marc de Bourgogne Tres Vieux Cartron is due, among other factors, to the choice to use exclusively red wine pomace from areas with controlled designation of origin (A.O.C.) selected among the most famous: Chambolle-Musigny, Gevrey-Chambertin, Vosne-Romanée, Aloxe-Corton, Volnay or Pommard, to name just a few. A unique selection of red wine pomace from the Pinot Noir variety, combined with meticulous distillation, controlled aging and a careful assembly, offers our Marc de Bourgogne all its freshness, intensity and fruity aromas. Cartron's savoir-faire is reflected in the alchemy between different and inseparable skills: that of the winemaker, the distiller and the Maison Cartron.
Tasting notes
At sight, it has a golden color with a certain brilliant clarity.
The nose is expressive, with notes of ripe grapes and a touch of vanilla and caramel. Delicious complexity, with the woody side well integrated.
On the palate it is full and generous with flavors of spices and sultanas.
The finish is noble, elegant, with a very long persistence, between 15 and 20 tails. Very balanced overall.
Use Perfect as a digestive, tasted at room temperature.
Production: The vegetal material of the black grapes harvested during the harvest and gently pressed after fermentation is used. The pomace is kept in sealed vats, away from light and air for about two months. This process ensures the homogenization of the raw material and normal aging of the distillate, a sign of great quality and persistence in the mouth. The three itinerant distillers with whom Cartron has worked for decades proceed with the distillation in a traditional copper still, of the typical Burgundy type. Itinerant distillers are men of great experience, who work with ears, eyes and sensations. Their know-how is passed down from father to son. Each brandy (with an alcohol volume of around 50%) reflects the talent of distillation but also the quality of the terroir. The different eaux-de-vie produced have very varied characteristics, covering a range of exceptional flavours. They are then placed in different oak barrels and the long period of maturation in wood begins, which lasts at least 15 years. The savoir-faire of the Maison Cartron is expressed at the delicate stage of blending: that is, the assembly of these individually aged spirits, each with its own peculiar character.
