The pomace, since its arrival in the distillery, is treated and preserved with Grappasystem, a system created by Roberto Castagner, thanks to which it is possible to initiate a controlled fermentation, obtained with the addition of selected oenological yeasts. Grappasystem also guarantees preservation of the pomace in an ideal, healthy environment with the right pH level, inside food-grade plastic film tunnels, at high pressure and in the absence of oxygen. This is the secret that allows the pomace to keep its aromas intact even for several weeks, in a completely natural way. Fine and intriguing grappa, obtained from the distillation of a blend of the best pomace from white and red vines. Skilful blending of grappa obtained from technologically advanced continuous systems and traditional discontinuous systems. The olfactory sensations are pleasantly varied, with notes of honey and vanilla, accompanied by light floral and hazelnut scents.
