It is a Champagne that comes only from Avise Chardonnay. This micro-vignoble champagne is assembled from grapes of 3 different vintages all exclusively Chardonnay. The company works by applying principles of environmental and cultural sustainability and constantly offering products of great sensitivity and taste. Assailly stands out in particular for its precision of winemaking, for the possibility of using "Burgundy" wood and for the recent release of some interesting batches of cuvees that are able to better reflect the various terroirs of origin.
