Champagne Brut Nature – Ayala Brut Nature is an Ayala Champagne that comes from the grapes that come from the best plots of the domaine, located in various areas of the Champagne region: Côte des Blancs, Montagne de Reims, Vallée de la Marne, Aube, Vitry and Côte de Sézanne. This is a choice made by favoring the full and rich maturity of the fruit, essential for making a great brut nature. During the harvest operations, each individual vineyard is vinified separately. The best bunches are subjected to soft pressing and the free-run must ferments in stainless steel tanks at a controlled temperature. After aging for a few months, the base wines are assembled to create the definitive cuvée. The second fermentation takes place in the bottle according to the Champenoise Method, with a rest on the yeasts in the Maison's caves for a minimum period of 4 years.
Aging: 48 months on yeasts.
Vinification: Alcoholic fermentation in steel tanks and refermentation in the bottle according to the Champenoise method.
View: Golden yellow with brilliant reflections, fine and persistent perlage.
Perfumes: Delicate, fine, elegant on the nose, notes of crispy white pulp fruit, citrus fruits and bread crust emerge.
Taste: Complex, direct, savory, mineral in the mouth, excellent floral perceptions and a good persistence finish.
