North Star Spirits' third batch of Chaos is true to the original intent of bottling fine Islay single malts at reasonable prices, but creates a bit of chaos in the recipe, as this batch combines an ex-hogshead bourbon and four ex-octave of ruby ​​port along with a single butt of sherry, all from the same distillery. After blending, the batch is reduced to 50% ABV, to produce 1400 bottles of this rich clash of smoky savory notes and deep red fruit.

Nose: peppery and spicy with peat smoke, juicy orange peel, toasted oak and a hint of seawater

Palate: fruity jam aromas followed by juicy berries, raisins, maritime aromas, creamy pralines and peat smoke

Finish: Coating in the mouth with buttery oak, sherry fruit and of course peat smoke
