Etymology
This is the name of a large plot, in Savigny-lès-Beaune, located near the town called Le Village, not far from the Rhone. There must have been gardens near the Rhoin and village houses or walled meadows. The recently created place called Le Village reminds us that the city has expanded its wine-growing region by bringing together small plots that could be gardens or vines or meadows. The fact that Clous is in the plural suggests that several gardens were cultivated where there were meadows, before they became vineyard land. (See Nail(s/x)) and (See Village).

Lives
Old Massal selection of Pinot Noir planted 161-49. Old vines, 50 years on average.

The terrain
Clayey-limestone soil, formed by calcareous screes on Jurassic subsoil. Very stony, these soils are hot and dry.

Winemaking
The grapes are 100% pressed and destemmed. Fermentation starts quickly (no pre-fermentation maceration). The extraction of aromas, tannins and color is natural (no enzymation, no forced extraction due to excessive heating) and is carried out only with punching down. Vatting lasts about 10-12 days. The free-run wine and the first pressing are assembled, decanted and blended. The Savigny 1er Cru “aux Clous” is aged in new barrels for 15% to 20%. The oak in the barrels comes from the Allier forests which provide an elegant aromatic touch and from Nevers, which is more interesting for its structure. Maturing lasts about a year; the wine is bottled without fining, with very light filtration.

Exposure
South facing, on a gentle slope facing the village of Savigny. It is located at an altitude of approximately 260 m, in the heart of the appellation.
