Culture
To express all the particularities of our terroir, and the typical nature of our vineyard (45ha in a single plot, therefore 30 hectares of vineyard), we maintain a harmonious ecological balance by respecting the natural cycles of the environment, the earth to regenerate and permanently renew life of the land. This is the basis of our commitment to organic and biodynamic viticulture.

Territory
The terroir of our Uchaux Massif is made up of siliceous sandstone and calcareous sandstone dating back to the Upper Cretaceous at the end of the secondary era. These stony, clay-sandy soils facilitate good rooting and allow a balanced diet of water. The surface structure of this terroir has a high calorific value linked to the significant stoniness. All these particularities combined with a south/south exposure, that is, contribute to a low production of the plant, to a slow and constant maturation, a promise of optimal concentration and maturity of the grapes.

Vinification/Aging
After an initial sorting carried out on the ground by our harvester team, a second sorting is carried out by our staff during placing in the vat. Reception of the harvest by gravity, to avoid any pressing of the grapes, partial destemming of the Grenache, vinification for 2-3 weeks in a thermoregulated tank. Assemble the juice release and press the juice. Aging in vats for 10 months.

Tasting/accompaniment
The color is a bright purplish red. The nose is complex, outgoing notes of fresh fruit and liquorice appear. Spicy, the mouth is powerful where we find notes of ripe fruit, a good balance, a touch of minerality brings length and depth. Tannins are ripe and distinct, it is a wine to keep that will accompany small game birds, local lamb, but also grilled fish.
