Fantini Vigneti Zabù Sensuale Rosato Terre Siciliane IGT 2023

VARIETY: Nerello Mascalese 40%, Merlot 30%, Cabernet Sauvignon 30%
COLOR: Rosé
PRODUCTION AREA: Sambuca di Sicilia, AG

VINEYARDS: Our grapes come from Sambuca di Sicilia, a small town in the province of Agrigento where the calcareous soil and the proximity of Lake Arancio create excellent drainage, allowing the vines to reach depths of nutrients and water, giving minerality and fresh acidity to wine. The high altitude sun imparts an explosive concentration of aromas, well balanced with a vibrant acidity.

VINIFICATION: In the cellar, the grapes are destemmed and delicately pressed. Soft pressing of the grapes with dry ice in the press which allows to obtain the best extraction from the skins of all the aromatic precursors as well as the color that distinguishes this rosé. Fermentation in stainless steel at 12°C for 20-25 days, addition of selected dry yeasts. Refinement in steel with regular pumping over.

SENSORY CHARACTERISTICS: With a bright pale pink colour, it has delicate floral scents (jasmine and rose petals), accompanied by delicate fruity notes of plum, melon and pink grapefruit. On the palate it stands out for its freshness and refined minerality with a light bitter almond finish. It stands out for its refinement and persistence.

PAIRING: Perfect with raw shellfish, vegetarian dishes, fresh cheeses, Asian dishes that are not too spicy and white meats.

WINEMAKER: Giuseppe Burruano
