In the 19th century, both English Gin and Scotch Whiskey were experiencing a renaissance: it was precisely in the Gin Palaces of the 19th century that the two worlds came to touch, when English Gin was served from barrels that had previously contained Scotch Whisky. Although the Gin Palaces in London are no longer there, Hayman's wanted to keep this Victorian tradition alive. After gently distilling its English Gin, Hayman's keeps it resting for three weeks in ex-Scotch Whiskey barrels, so as to let the spicy and peppery notes of the gin emerge while maintaining the delicate notes of the botanicals intact. Hayman's Gently-Rested Gin has a silky, smooth body and a uniquely balanced finish, with the lively flavors of juniper and coriander giving a traditional English Gin structure – with a Gin Palace twist.
