The Repertorio Cantine del Notaio is a ruby ​​red wine with garnet reflections, bright and impenetrable. It has an elegant nose reminiscent of ripe cherries and plums, accompanied by spaced hints of liquorice root. The taste is characterized by its harmonious character and pleasantness. It closes with a long finish and sweet spices.

Description

Grapes: 100% Aglianico del Vulture
Harvest: manual in boxes in the second/third decade of October when the maturation process is now in the crucial phase.
Vinification: maceration for approximately 10 days and vinification at a controlled temperature in stainless steel and responds to a more "traditional" type and model of processing and type of wine. /strong>.
Maturation: in natural volcanic tuff caves, in French oak carats or tonneaux, for a period of at least 12 months.
Alcohol: approximately 14.00%.
Organoleptic test:
Color: Ruby red with garnet reflections, bright and impenetrable
Aroma: It has an elegant nose reminiscent of ripe cherries and plums, accompanied by hints of spice and liquorice root.
Flavor: in the mouth it is rich, full, well balanced, with evident notes of cherry, a slightly spicy morello cherry finish and with a pleasant tannicity which is typical of the grape variety and traditional processing.
Pairing: Excellent with roast red meat and game-based preparations.
Serving Temperature: serve at room temperature, around 18°C.

Characteristics of Aglianico del Vulture

In Basilicata there are two magic words: "Aglianico" and "Vulture", which give life to these unique and unrepeatable vineyards in their production, which grow on the slopes of the Vulture volcano. The uniqueness factor dates back to 133,000 years ago, when there was a gigantic volcanic explosion and the ashes invaded the entire territory. Over the centuries these ashes have merged with the territory becoming a spongy rock, also called volcanic rock (or volcanic tuff). In fact, farmers say that great wines are great because there is tuff underground that "nurses the plant". All this together with the extreme conditions, the lack of water, the strong temperature variations and the mountains, contribute to the growth of this incredible vineyard which takes the name of Aglianico del Vulture. From here comes this extraordinary wine, strong, important, truly warm; we could define it as an “iron fist in a velvet glove”.

The grapes are harvested between the end of October and the beginning of November, after which it is vinified and bottled, remaining in the bottle for 9 months, thus becoming "Aglianico del Vulture Doc".

By giving it longer aging times, both in barrel and in bottle, it becomes “Aglianico del Vulture Superiore DOCG”. An important wine with a structure that evolves over time, thanks to its incredible longevity.

Its dominant characteristics on the nose are those of: Ripe red fruits, with an enchanting note of violet. On the palate it is a warm, important, rich wine, with a slightly bitter note, which distinguishes it, which recalls the hints of liquorice root; and this is how in one sip you can savor the entire territory, which still preserves an uncontaminated nature.

Its origins are very ancient and date back to Magna Graecia, even the poet Homer dedicated verses to it.
