Production area: Haidthal north of Velm-Götzendorf, 185 m above sea level.
Soil: 35 year old vines, sand-limestone soil
Harvest: manual
Vinification: short maceration, soft pressing of the grapes for more than 8 hours. Fermentation with natural yeasts and rest on the yeasts for 5 months during which the bâtonnage is carried out
Aging: 5 months in steel
Color: bright straw yellow
Perfume: notes of white flowers, chalky sensations, citrus fruits and white pulp fruit
Taste: fresh, delicate, mineral and smooth, with a citrus persistence
Alcohol content: 11.5% vol

 

Born in 1980, Johannes Zillinger joined the small family business in 2000 and immediately made his mark with decisive and profound choices. First of all, the development of a circular economy: self-produced compost as fertilizer, herbs grown in the vineyards as a refuge and habitat for beneficial organisms and as bases for the extracts used on the company. And then a great openness towards different methods such as total or partial fermentation in amphora, intercellular fermentation and conservation without sulphites (for NUMEN wines) or the use of the solera method (REVOLUTION). The company has been certified organic since 1984 and in 2013 obtained the Demeter certification to seal the new way of conceiving wine, but above all for the management of the vineyard. In the old 350-year-old cellar located in the Kellerberg area, where the roots of the vines pierce the vaulted ceiling, Johannes rests his wines in old barrels or amphorae, obtaining extraordinary wines, but above all of great elegance and longevity, confirming the his great talent well recognized in the country and which make the winemaker from Velm one of the greatest current interpreters of Austrian oenology.
