VINIFICATION The alcoholic fermentation at a controlled temperature takes place in a wide-mouthed vat where the must is moved for approximately 10-15 days. This is followed by malolactic fermentation and maturation in small oak barrels and used barriques.
EVALUATION OF THE ENOLOGIST Intense ruby red colour, it has precise and typical aromas, with hints of blackberry and clove. In the mouth it has a soft and succulent attack, velvety tannins, and good persistence.
PAIRING Ideal with red meat, South Tyrolean dishes and cheese.
