ANALYSIS ALCOHOL CONTENT: 13.5 % TOTAL ACIDITY: 4.8 g/l RESIDUAL SUGAR: 2.2 g/l

VINIFICATION The alcoholic fermentation at a controlled temperature takes place in a wide-mouthed vat where the must is moved for approximately 10-15 days. This is followed by malolactic fermentation and maturation in small oak barrels and used barriques.

EVALUATION OF THE ENOLOGIST Intense ruby ​​red colour, it has precise and typical aromas, with hints of blackberry and clove. In the mouth it has a soft and succulent attack, velvety tannins, and good persistence.

PAIRING Ideal with red meat, South Tyrolean dishes and cheese.
