Area: San Marzano, Salento, Puglia. About 100 meters above sea level.

Aging: In French and American oak barriques for 6 months.

Soil: Medium clay texture, shallow and with good presence of skeleton.

Cultivation: Espalier (5,000 vines per hectare).

Harvest: Second week of September.

Vinification: Thermo-controlled maceration for approximately 10 days followed by alcoholic fermentation with selected yeasts.

Aging: In French and American oak barriques for 6 months.

Organoleptic characteristics: Ruby red color enriched with violet reflections; opulent aroma reminiscent of ripe cherries and plums, with pleasant notes of cocoa and vanilla. Wine with remarkable structure, softened by the persuasive warmth of Primitivo, which ends in notes of long sweetness.

Pairings: Robust first courses, lamb, game with elaborate sauces and hard cheeses.

Serve at: 16-18 °C.
