Long refermentations in autoclave and a patient wait are method choices that emerge from the delicate, fine and persistent perlage of these two high-class sparkling wines.

Winemaking
Manual harvesting with selection of bunches. Soft pressing and maceration and selection of the different fractions of must. Static clarification, separation of funds. Fermentation in steel at controlled temperature. Refermentation and second fermentation in autoclave. Aging “sur lies” for 4-5 months. Bottling in March.

Gastronomic pairings
Perfect as an aperitif, but also excellent throughout the meal thanks to its delicate bubbles, it goes well with raw and delicate fish-based dishes.

The wine
Pale straw yellow colour, crystalline with a fine and persistent perlage. Fine and delicate on the nose, with clear hints of citrus notes and hints of apple and pear. The marked acidity is delicious, well balanced by a delicate structure and a pleasant softness. Good taste-olfactory persistence.
