The winemaking:
Manual harvesting with selection of bunches. Soft pressing and maceration and selection of the different fractions of must. Static clarification, separation of funds. Fermentation in steel at controlled temperature. Refermentation and second fermentation in autoclave. Aging “sur lies” for 4-5 months. Bottling in March.
The wine:
Persistent foam with fine perlage, intense pink colour. Fragrant scent
and complex, with delicate aromas of cherries and raspberries. Persistent, harmonious taste
Nico and velvety, with good balance.
Food pairings:
Excellent as an aperitif, it pairs well with soups, omelettes and main courses
