A secret and sublime rum here from the Dominican Republic, bottled independently by That Boutique-y Rum Company. It was given five years of maturation in the Dominican Republic, before reaching the UK, where it was finished in ex-Madeira casks, then bottled at 53.2% ABV. Wonderful and also mysterious stuff...

Nose: plum, peach, red licorice, a hint of tangy lemon, cut grass and dark chocolate. Palate: Tart molasses, more citrus, raspberry, heavy vanilla. Finish: Spoonfuls of dried fruit, with hints of almond and oily walnut.
