Bombino Nero is an indigenous grape present in Puglia, in a significant way, especially in the Bari area, whose areas have an ancient tradition for the production of rosé wines. It seems to be originally from Spain, and its name "Bombino" indicates "Good wine". In the vineyards of the Villa Schinosa company it is used for the pure vinification of rosé wine.

 

PRODUCTION AREA

North of Bari – Contrada Schinosa – Trani at 70m. above sea level

VARIETY

70% Bombino Nero, 30% Aglianico

VINEYARDS

Espalier trained with Guyot on tuff-limestone soils with a density of 4500 plants per hectare.

WINEMAKING

The harvest takes place in the first half of September. The maceration of the skins of this very pale colored variety takes place for approximately 12 hours under extreme cold. After soft pressing of the pomace, a clear free-run must with a coral pink color is obtained. Alcoholic fermentation takes place with selected ferments and at a constant temperature that does not exceed 15° C.

MATURATION

In stainless steel. Subsequent refinement in bottle for a period of 1-2 months.

TASTING NOTES

Pale pink in colour, the scent is reminiscent of blueberry with strong fruity notes of fermentation, the taste is appropriately acidic but based on freshness and softness on the palate.

FOOD PAIRINGS

Starters, light and fresh cheeses, shellfish and white meats. It is served fresh at a temperature of around 10°-12°C.
