BRUNO PAILLARD Première Cuvée Extra Brut
Bruno Paillard's Première Cuvée is a very personal interpretation of the entire region, through a selection of 35 of the 320 crus of Champagne.
It is a flagship of the Maison. Of only first quality, it must go through good years as well as unhappy ones, remaining faithful to itself.
Cru
More than 30 crus resulting from the most noble terroirs of Champagne, the composition of which is kept secret.
Assembly
Extra brut with very little sugar content, less than 6 g/l; a very pure, very authentic champagne. (To remind you, the « extra brut » dosage describes a presence of sugar of up to 6 g/l). barrel.
Reserve wines
25 vintages assembled since 1985 in a proportion that can go up to 50%.
Maturation
Maturation is prolonged well beyond the legal duration: 3 years on the yeasts followed by a minimum of 5 months after disgorgement.
Dosage

TO THE EYE Straw gold color and very fine perlage. The nuance reveals the strong percentage of Chardonnay and the exclusive use of the first pressing. The finesse of the perlage is due to a noble raw material, a perfectly controlled, fresh and constant cellar temperature, and very long aging in the bottle.
ON THE NOSE The first aromas reveal the citrus fruits of Chardonnay: green lemon, grapefruit. Then the aromas of red fruits appear: currant, raspberry, black cherry, characteristic of Pinot Noir. Leaving it to open in the glass reveals a link with slightly candied fruits, such as the exotic Pinot Meunier (pineapple).
IN THE MOUTH The attack is lively thanks to a low dosage that respects the authenticity of the wine. The nose is confirmed with the first flavors of citrus fruits, almonds, toasted bread... but also of black cherry jelly then black fruits such as cherry, fig or blackberry.
In its evolution, its aeration, its heating, it reveals light flavors of plum and pear. The mouth is wide without being heavy, quite long, leaving a very clean finish.
It exists in half bottles, bottles, magnums and jéroboams. Each bottle bears a back label indicating the month and year of disgorgement.
