Fattoria dei Barbi Brunello di Montalcino DOCG 2018
Brunello is the "heart" of Fattoria dei Barbi, produced by us since 1892 and highly decorated on numerous occasions
VINIFICATION: the crushed and destemmed grapes underwent a sudden drop in temperature to 16°C, in a CO2 protected environment. This process of cooling the grape skin allows for greater extraction of the anthocyanin and polyphenol content. The normal alcoholic fermentation lasted for approximately 16/17 days at a controlled temperature of 27°-28°C. The racking is followed by malolactic fermentation and subsequently the wine is
was placed in medium-small capacity wood (2.25 hl –15 hl) followed by passage into higher capacity barrels.
The Brunello Annata is aged in small and medium capacity barrels for at least 2 years with subsequent passage into higher capacity barrels.
AGING: in bottle for a minimum of 4 months.
CHEMICAL ANALYSIS: Alcohol 14.5% – Total acidity 5.4 g/l – Volatile acidity 0.47 g/l – Residual sugars <0.4 g/l
Dry extract 28.7 g/l – pH 3.40.
SENSORY ANALYSIS.
COLOR: brilliant ruby red, bright, medium intensity.
FRAGRANCE: red berry fruit, cherry, mint, dog rose. Light nuances of wild fennel and sage.
TASTE: elegant, smooth with a pleasant spiciness, austere and aristocratic sip with an "old-fashioned" finish. Good balance between acidity and tannin.
