Aroma: A balanced attack of fresh, clean pine and resin, paired with light citrus zest. Palate: Initially oily and enveloping, with juicy and rich orange peel and lemon pith, then the bold appearance of black pepper and cardamom, tempered by a subtle herbaceous softness. FINAL: Long, soft and dry finish, with effervescent spicy notes.

The challenge for Holyrood in making Height of Arrows was to create a gin with the mindset of a whiskey maker. The whiskey's wide range of flavors is based on the distillers' experience in using just three ingredients: water, malted barley and yeast. In creating Height of Arrows they therefore tried to create a gin that followed the same principle of simplicity, in the use of few ingredients to obtain very rich and intense flavours. Height of Arrows contains just three ingredients: juniper, Isle of Skye sea salt and natural beeswax. Juniper creates complex flavors that range from fresh pine and stronger citrus to peppery spice. Salt is a natural flavor enhancer that pairs with juniper to give an additional depth of flavor. Beeswax serves as a finishing touch, creating a soft, lush texture. Distilled in the experimental still of the Holyrood Distillery, it is bottled at 43%.
