Sensory Analysis – Bright pale pink. Fine and persistent perlage. On the nose it is elegant, with delicate almond and bread-making notes; when tasted it is full, dry and acidic. Savory finish.

The vineyards extend across the municipality of Capestrano at 480 m above sea level. within the Gran Sasso and Monti della Laga National Park. The area is characterized by high temperature variations which preserve acidity and improve the synthesis of aromas. The soil, of a pebbly-sandy matrix, is ideal for giving the wines flavor.
Characteristics of the variety

Pinot Noir is a rather delicate vine, characterized by early maturation. It prefers calcareous soils and climates that are not too hot, where it would ripen too quickly. Vinified in white, it is used as a base for the best classic method sparkling wines.
Vineyard

100% Pinot Noir, vintage, density of 5200 vines/ha, yield of 120 q/ha, manual harvesting in boxes towards the end of August.
Winemaking

Washing and subsequent refrigeration of the grapes at 8°C. Soft pressing of whole bunches with selection of free-run must. Subsequent static decantation. Fermentation in steel with selected yeasts at 14-16 °C. Raising and subsequent classic method refermentation at 18°C. Disgorging without adding liqueur d'expedition (pas dosé).
Refinement

Long stay in the bottle on the yeasts. To be stored at 14 – 16 °C and consumed preferably within 24 months of disgorgement.
